Each vanilla meringue is lovingly handmade using unrefined sugar and aquafaba. Unrefined sugar is much easier for our bodies to process, while still providing the perfect sweetness.
You’d be forgiven for not realising London Apron’s Plant Based Vanilla Meringues are made with 100% natural, vegan ingredients. Unreﬁned sugar and aquafaba create the light and airy meringue consistency, while vanilla extract adds a luxuriously indulgent ﬂavour. (Honestly, it’s pretty much magic.)
Make a delightful ‘Vegan Eton Mess’ by serving with fresh strawberries and coconut cream. To make coconut cream, refrigerate a can of coconut milk overnight then scoop out the cream. Beat with three tablespoons of sugar until soft peaks form.
Silvina and her team use aquafaba (aka 'water bean' or 'chickpea water') to create completely vegan meringues. With a similar viscosity to egg white, it can be whisked up to create that classic fluffy meringue texture. It’s important to us that our vegan treats are 100% natural, that’s why we never add any artficial colours, flavours or preservatives.
